This wine started as a Reserve wine from Pallavicini private family cellar, has now become an excellent red wine matured in barriques and fined in bottles. It derives from Cabernet Sauvignon, Montepulciano and Sangiovese. The production averages 35 hectolitres per hectare, thanks to careful pruning and the harvesting which is done by careful selection grapes. The vinification process uses the dlestage method ageing for one year in barriques then in bottles. This create an elegant wine that offers enticing aromas of black cherry and cassis, creamy vanilla notes, followed by full, ripe fruit flavours and a hint of spiced oak. Barrel aged one years in French oak, the soft tannins help create a supple texture that fills the mouth with layers of flavour and a long, lingering finish. lasting flavour. With this wine, Pallavicini has brought alive the ancient Castelli Romani tradition of producing fine red wine. Combining this with modern innovative techniques, they have obtained surprising results.
